Meals at Rio Caliente are not just a social occasion, but a wonderful culinary experience. The grain-based, complex carbohydrate, high fiber, low fat, low salt cuisine includes lots of fresh fruits and vegetables, optional dairy products and some traditional Mexican foods, all served in generous buffet style. Food such as this is so accessible to metabolic processes that nothing is left to be stored on the body, so it's easy to lose weight during your stay - as much as a half-pound a day – with no effort and while thoroughly enjoying your adventure in vegetarian dining. (FYI, we do serve white meat occasionally so we are not kosher)

Many of the vegetables served at Rio Caliente are grown in our own organic gardens on the property. Everything we buy is of the highest quality, fresh from surrounding farms. Because of the temperate climate, you'll find luscious fruits and vegetables native to this part of the world available here year round. We grind our own wheat and bake our high protein bread, muffins and sweet breads here at the spa. Our state-of-the-art water purification system and ozone/ultra-violet filtration process assures purity in all of our produce and drinking water.

The unique recipes for many of the favorite dishes at Rio are included in our cookbook, The Whole Enchilada.

Now in its third printing, this ever-popular book is much more than a cookbook. The actual menus and dishes are set within the framework of our environment – the fascinating geology of the area, the birds, trees and flowers – as well as the history of Guadalajara and the significant local indigenous tribe, the Huichol, who display and sell their beautiful art work on our Patio most days. This will either give you a really good idea of where and what Rio is, or remind you of your last vacation here.

A Typical Day's Menu Includes

Breakfast:

Rio’s special homemade granola, hot oatmeal, fresh ground seeds, and bran

Creamy fresh yogurt

Scrambled eggs

Daily choice of potatoes, frijoles, chilaquiles or another tasty side dish

Lunch:

Fresh salads rich with a variety of mixed greens, sprouts and colorful vegetables enlivened by a selection of Rio’s healthy dressings.

A daily entrée: Nut and seed loafs, pastas, tofu, beans, rice and grain dishes, all prepared with an eye for perfectly balanced nutrition and wonderfully tasty combinations.

Fresh vegetables, lightly steamed and served with our special sesame seed seasoning

 

Dinner:

Every evening a homemade soup chosen from the spa’s many savory recipes

Rio’s new salad bar with a variety of tasty items for creating your own salad, enhanced by our condiments and dressings

High protein dips and spreads
